Shantelle Henry – PhD candidate, The University of the West Indies, St. Augustine

A postgraduate student at the University of the West Indies, St. Augustine pursuing PhD in Food Safety and Quality Assurance. Research focusing on the anticancer properties of plant extracts; evaluating natural health products manufactured in the Caribbean postulated to be effective in the treatment/prevention of cancer.

Employed as a member of the Food and Agriculture Organization of the United Nations value added project being undertaken by The University of the West Indies. The project requirements include, rapid assessments and microbiological analysis to be conducted on specific food processing facilities in some Caribbean Islands. Also, to develop SSOPs and guidelines for processing.

Possess demonstrable experience in sample analysis, laboratory analysis and the implementation of procedures for continual improvement of Quality Management System, Food Safety Management System and traceability.
